Pappardelle [pah-pahr-DEHL-leh] is a wide pasta noodle (¾–1-inch). If you can’t find it, it’s fine to use fettuccine or tagliatelle instead.
Instructions
Cook pappardelle in a pot of boiling salted water according to package directions; drain.
Cook bacon in a skillet until crisp; transfer to a paper-towel-lined plate. Add bread crumbs to skillet with drippings and cook over medium heat until crisp, 2–3minutes; transfer to a bowl and add bacon. Wipe out skillet.
Melt butter in same skillet over medium heat. Add chard stems and shallots; cook until softened, 2 minutes. Add chard leaves; cook, tossing, until wilted, 3 minutes.
Stir in cream, zest, and nutmeg; bring to a boil. Reduce heat and simmer sauce 2 minutes; season with salt and pepper.
Toss pappardelle with sauce and Parmesan, then top servings with bacon bread crumbs.
