Preheat grill to medium-high.
Season steaks with salt and pepper, and drizzle with oil. Grill, covered, to desired doneness, 2–3minutes per side for medium-rare. Let steak rest 5 minutes before slicing into strips and fanning into a crescent shape on serving plates with Panzanella.
