Falafel Meatball Wrap with Tzatziki
These updated Middle Eastern meatballs are skewered for looks and presented as wraps. The meat is spiked with chickpeas, the main ingredient in falafel. Aside from the flavor they provide, the chickpeas also act as a binder, helping the meatballs hold their shape. Tzatziki [dzah-DZEE-kee] is a yogurt-based Greek condiment that tastes great with the beef.

Instructions
Preheat oven to 400°.
For the meatballs, purée chickpeas, parsley, egg, 1 Tbsp. oil, oregano, garlic, 1 tsp. salt, and 1 tsp. pepper in a food processor; transfer to a bowl. Add ground chuck, onion, and bread crumbs, then mix to combine. Divide mixture into 12 portions and shape into golf ball-sized meatballs. Thread meatballs onto skewers and brown in a nonstick ovenproof skillet with remaining 1 Tbsp. oil over mediumhigh heat. Transfer skillet to oven and finish cooking, 10 minutes.
For the tzatziki, pulse yogurt, cucumber, feta, zest, lemon juice, and 1 Tbsp. oil in a food processor until cucumber is coarsely chopped.
For the wraps, arrange 3 meatballs in each lettuce leaf, drizzle each with tzatziki, and garnish with tomatoes.
