Fattoush Salad with Steak Kebabs
Take a fresh approach to the steak dinner with simple skewers served over a colorful salad.
Fattoush [fah-TOOSH] is a Middle Eastern salad of seasonal produce and herbs, as well as pieces of pita bread. The concept is similar to traditional Italian panzanella — a salad of tomatoes and soaked stale bread. Except here, bite-sized pieces of grilled pita bread absorb some of the lemony vinaigrette for extraordinary flavor. Top the salad with hearty grilled steak kebabs to make it a meal.

Instructions
Preheat grill to medium-high. Brush grill grate with oil.
For the salad, whisk together zest, lemon juice, olive oil, garlic, cumin, and honey; season with salt and pepper.
Combine romaine, tomato, cucumber, onion, mint, and parsley.
For the kebabs, toss steak with 2 Tbsp. olive oil and thread four cubes onto each of four skewers; season with salt and pepper. Grill kebabs, covered, 2 minutes. Flip kebabs and grill 2 minutes more for medium-rare. Grill pitas until marks appear, 1 minute per side.
To serve, cut pitas into bite-sized pieces and add to salad; toss with vinaigrette. Divide salad among bowls; top with kebabs and Roasted Chickpeas.

To get just enough tomato in each bite of salad, cut the tomato into slices, then quarter the slices.

For big bursts of flavor, leave mint and parsley leaves whole instead of chopping them.
