Filets & Fideos
Sirloin Filets are lean and flavorful, plus quick to prepare, so you can get dinner on the table fast — and there’s no need to turn on your grill. Fideos aren’t just the perfect side kick, they’re chock-full of veggies, too.

The fideos (which means “noodles” in Spanish) are so flavorful and hearty on their own, you could easily forgo the steak for a vegetarian option.
Instructions
Preheat oven to 500° with a baking sheet inside.
Combine 1½ tsp. paprika, ½ tsp. salt, and ½ tsp. black pepper. Coat filets with paprika mixture.
Toss pasta with 1 tsp. oil in a sauté pan until coated. Cook pasta over medium heat, stirring often, until toasted and has a nutty aroma, 3–4 minutes; transfer to a bowl.
Heat remaining 2 tsp. oil in same sauté pan over medium high. Add filets and sear on both sides, 2 minutes per side. Transfer filets to preheated baking sheet.
Cook filets until a thermometer inserted into centers registers 135° for medium-rare, 8–10 minutes. Transfer filets to a plate; let rest while making fideos.
Add minced onion to same sauté pan and cook until softened, 2 minutes. Stir in garlic, 1 tsp. jalapeño, remaining 1 tsp. paprika, and cumin; cook until fragrant, 1 minute.
Stir in toasted pasta, water, hominy, 1 cup tomatoes, and bell pepper; bring to a boil. Reduce heat to medium-low and simmer pasta, stirring occasionally, until tender and liquid is mostly absorbed, 12–14 minutes. Stir in remaining ½ cup tomatoes, diced onion, cilantro, lime juice, and remaining 1 tsp. jalapeño; season with salt and black pepper.
Serve filets with fideos.
