Instructions
Coat pork slices with cornstarch.
Heat oil in a skillet over medium-high. Add pork, sauté until browned, 4–5 minutes. Add shallots and sauté until soft, 3 minutes.
Whisk in broth, peanut butter, curry paste, fish sauce, brown sugar, and soy sauce; bring to a boil, then reduce heat to medium and simmer until thickened, 3 minutes.
Stir in spinach, bamboo shoots, cilantro, lime juice, and lime leaves. Serve curry with rice and peanuts.
