Give these vegetarian hoagies a try and you won’t even ask “where’s the beef?” Even our most ardent meat eater on staff was overheard saying “this is really good!” With satisfying fillings like charred broccoli and red onion, gooey Cheddar, and pickled pepper rings, this stacked vegetarian sandwich reaches new culinary heights. There are many beliefs about where the name “hoagie” came from. One theory is that it was a sandwich so big that “you had to be a hog to eat it.”

Preheat grill to medium-high. Brush grill grate with oil.

Grill broccoli and onion, covered, until slightly charred, 3 minutes per side; transfer to a bowl and season with salt and pepper.

Brush rolls with mayonnaise and Dijon, sprinkle on Cheddar, then grill, cheese sides up, until cheese melts, 12 minutes.

Divide broccoli, onion, and pepper rings among rolls and serve.

Onions are tough to grill because the rings separate and fall through the grates. The way to prevent this is to “lollipop” them. First, slice the onion horizontally into ½-inch-thick slices, then push a skewer through the slices, brush with oil, and grill. Divide onion into rings once grilled.
