With a bumper crop of summer tomatoes, make extra tomato relish and use other fresh herbs such as basil and cilantro. Spoon over feta for a quick appetizer, over scrambled eggs for a quick breakfast taco, or over grilled fish for a fresh entrée.

Instructions

Place chicken between sheets of plastic wrap. Using the flat side of a meat mallet or a rolling pin, pound to ½-inch thickness. Drizzle chicken with 1 tablespoon oil, and sprinkle with 2 teaspoons salt and ½ teaspoon pepper.

Combine tomatoes, onion, garlic, vinegar, oregano, 2 tablespoons oil, ½ teaspoon salt, and remaining ¼ teaspoon pepper in a medium bowl.

Heat a grill pan over medium heat until hot. Brush pan with remaining 1 tablespoon oil. Add chicken; cook for 4 to 5 minutes per side. Remove from heat.

Sprinkle remaining ½ teaspoon salt on Burrata. Top chicken with Burrata and tomato relish. Sprinkle with oregano and pepper, if desired.
