Grilled Chicken with Tomato Relish and Burrata requires minimal prep work, but looks impressive enough for guests. The Burrata puts it over the top, and will have you reaching for your phone to get that perfect Instagram shot.

With a bumper crop of summer tomatoes, make extra tomato relish and use other fresh herbs such as basil and cilantro. Spoon over feta for a quick appetizer, over scrambled eggs for a quick breakfast taco, or over grilled fish for a fresh entrée.
Instructions
Place chicken between sheets of plastic wrap. Using the flat side of a meat mallet or a rolling pin, pound to ½-inch thickness. Drizzle chicken with 1 tablespoon oil, and sprinkle with 2 teaspoons salt and ½ teaspoon pepper.
Combine tomatoes, onion, garlic, vinegar, oregano, 2 tablespoons oil, ½ teaspoon salt, and remaining ¼ teaspoon pepper in a medium bowl.
Heat a grill pan over medium heat until hot. Brush pan with remaining 1 tablespoon oil. Add chicken; cook for 4 to 5 minutes per side. Remove from heat.
Sprinkle remaining ½ teaspoon salt on Burrata. Top chicken with Burrata and tomato relish. Sprinkle with oregano and pepper, if desired.
