Instructions
Preheat grill to medium-high.
Brush grill grate with oil.
Melt butter in a saucepan over
medium-low heat; add garlic,
habañero, and Fresno and sweat
until softened, 3 minutes. Stir
in cilantro when ready to use.
Grill steaks, covered, until
browned on one side, 4–5
minutes. Flip steaks and grill until
a thermometer inserted into the
thickest parts registers 135° for
medium-rare, 5–8minutes more.
Transfer steaks to a cutting board
and let rest 5 minutes before
slicing. Baste steak with chile
butter while resting.
