Grilled Kielbasa Sandwiches with sweet & sour sauce and pineapple relish
Polish kielbasa, that U-shaped smoked pork or beef delight, is split open for faster, less roly-poly grilling in this Grilled Kielbasa Sandwich with sweet & sour sauce. A pineapple relish brings a bright, sweet salute to Hawaiian flavors. Half a sausage satisfies smaller appetites (or use a whole sausage if you’re really hungry!).

Instructions
Preheat grill to medium-high. Add wood chips as specified by the manufacturer. Brush grill grate with oil.
Heat vinegar, brown sugar, Sriracha, garlic, and ½ tsp. salt in a saucepan to a boil over high, whisking until sugar and salt dissolve. Reduce heat to medium; simmer sauce until starting to get syrupy, 8–10 minutes.
Grill pineapple slices on both sides until grill marks appear, 3–5 minutes; transfer to a cutting board and when cool enough to handle, chop.
Combine pineapple, onion, cilantro, ginger, jalapeño, and lime juice; season relish with salt and pepper.
Grill cut sides of baguettes until toasted, 1–2 minutes.
Cut kielbasa crosswise into two long pieces; then, halve each piece lengthwise.
Grill kielbasa until grill marks appear, 3–4 minutes per side.
Arrange two pieces of kielbasa on bottom halves of baguettes; top each with 1 Tbsp. sauce, ¼ cup relish, and baguette tops.
