Lamb chops offer a terrific alternative to steak — they’re quick to cook and every bit as tasty, and couldn't be easier — just season and grill. Pair the chops with the sweet and tart herb sauce. It’s based on a traditional English mint sauce, but throw in mint’s sister herb, basil, for a Mediterranean flavor twist.

Broil lamb chops on high, with rack 6 inches from element, 4–5 minutes per side for medium-rare.
Instructions
Preheat grill to medium-high. Brush grill grate with oil.
For the sauce, purée mint, basil, oil, vinegar, lemon juice, sugar, and salt in a food processor.
For the lamb, grill chops, uncovered, about 4 minutes per side for medium-rare. Transfer lamb to a baking sheet, tent with foil, and let rest 5 minutes. Serve the chops with sauce.
