To help large chicken breasts cook evenly, try cutting them in half horizontally before flattening them.

Sear the chicken for a few minutes on each side to avoid overcooking; then keep it warm in the oven for 5 to 10 minutes.

Instructions

Place chicken between sheets of plastic wrap. Using the flat side of a meat mallet or a rolling pin, pound to ½-inch thickness. Drizzle chicken with 1 tablespoon oil, and sprinkle with 2 teaspoons salt and pepper.

Combine preserves and jalapeño in a medium microwave-safe bowl. Microwave on high for 1 minute. Stir in lemon juice until smooth.

Heat a grill pan over medium heat until hot.

Toss together tomatoes, 2 tablespoons oil, and remaining ½ teaspoon salt in a medium bowl. Add tomatoes to pan; cook until tender, 2 to 3 minutes. Brush peaches with 1 tablespoon oil. Add peaches to pan; cook until tender. Remove from heat, and brush with warm preserves mixture.

Brush grill pan with 1 tablespoon oil. Add half of the chicken to pan; cook for 4 to 5 minutes per side. Remove from heat, and brush with preserves mixture. Repeat with remaining 1 tablespoon oil and remaining chicken. Serve chicken with green tomatoes and peaches. Squeeze with lemon juice, and sprinkle with basil.
