Grilled Peach Salad with Blue Cheese French Dressing
Perfect for a summer night when you’re craving something light and fresh, this salad puts a sweet spin on grilling.
The prime time of year for peaches comes mid-grilling season, and it’s worth taking advantage of! After a few minutes on the grill, peach wedges become the highlight of this beautiful salad. Just be sure to use fruit that’s ripe enough to enjoy, but not so ripe that it’ll fall apart.
The peaches aren’t the only thing this spinach salad has going for it. Homemade dressing inspired by not one but two classics — blue cheese and French — provides just the right punch. And salty-sweet nuts on top offer some welcome crunch. This salad is great as a whole, but you can also try parts of the recipe — like the grilled peaches, dressing, and candied nuts — in all sorts of other dishes, too.

Preheat grill to medium-high. Brush grill grate with oil.
For the dressing, whisk together vinegar, lemon juice, ketchup, and 2 Tbsp. oil. Add sugar, brown sugar, onion powder, granulated garlic, and paprika; season with salt and pepper. Stir in 1 Tbsp. blue cheese.
For the salad, soak onion in ice water; drain. Grill peaches until grill marks form on cut sides, 3 minutes per side. If desired, remove skin when cool enough to handle.
Arrange spinach, onion, peaches, ½ cup blue cheese, and Candied Almonds & Pistachios on salad plates and serve with dressing.
