Grilled Pork Tenderloin with Scallion-Cilantro Sauce
Pork tenderloin is one of those easy-to-work-with proteins that cooks in a snap, goes great with lots of flavors, and is very tender. All it needs is a little time on the grill and a super-fresh zesty sauce made with scallions, cilantro, and jalapeños.

Preheat grill to medium-high. Brush grill grate with oil.
For the sauce, purée scallions, cilantro, jalapeño, lime juice, and oil in a food processor; season with salt.
For the pork, grill tenderloin on all sides until a thermometer inserted into the thickest part registers 145°, 10–12minutes. Transfer tenderloin to a plate, tent with foil, and let rest 5–10minutes. Serve tenderloin with sauce and top with Cotija.
Since the sauce is puréed, you can use the cilantro leaves as well as the stems. They have tons of flavor.
If you’re sensitive to spicy foods, be sure to remove the ribs and seeds from the jalapeño.
To avoid biting into a tough piece of pork, trim the silverskin from the tenderloin before cooking it.
