Grilled Salmon with savory-ish blueberry sauce is a surprising way to combine summer flavors into one super-nutritious entrée. The salmon’s richness pairs perfectly with the savory (yet sweet and oh-so-good) blueberry sauce.

Atlantic salmon is available year-round and exclusively farm-raised. If you can get it, wild Pacific salmon is best in terms of flavor and nutrition.
Instructions
Preheat grill to high. Brush grill grates with oil.
Sauté shallots and garlic in oil in a saucepan over medium-high heat until softened, about 3 minutes. Add blueberries, zest, orange juice, vinegar, brown sugar, and Dijon; heat to a boil. Reduce heat to medium and simmer sauce until blueberries break down and release their juice, about 10 minutes.
Meanwhile, whisk together broth and cornstarch; stir into simmering sauce until sauce thickens and turns clear, 1–2 minutes. Season sauce with salt and pepper; strain through a fine-mesh sieve. Reserve ¼ cup sauce for basting.
Grill fillets, covered, skin sides down, 3 minutes; flip, discard skins, baste with sauce, and grill fillets until firm to the touch, 1–2 minutes more. Baste fillets again before serving with remaining ¾ cup sauce; top with parsley.
