Grilled Tuna Sandwiches with charred scallion-wasabi mayonnaise
Most people think tuna salad is the only tuna sandwich, but meaty tuna steaks work well on the grill. And the wasabi hot-and-cool charred scallion mayonnaise simply pops on your palate.

The scallion-wasabi mayonnaise is great for other uses; try it on burgers.
Instructions
Preheat grill to high. Add wood chips as specified by the manufacturer. Brush grill grate with oil.
Grill scallions until lightly charred and wilted, 2–3 minutes; transfer to a cutting board and when cool enough to handle, mince.
Combine scallions, mayonnaise, ginger, wasabi, and lime juice; season with salt and pepper.
Brush buns with oil; grill cut sides until toasted, 1–2 minutes.
Season tuna with Old Bay; coat with nonstick spray.
Grill tuna until it naturally releases from grill, 3–5 minutes; flip and grill 3–4 minutes more. Transfer tuna to a cutting board; let rest 3 minutes.
Cut each tuna steak into 6–8 slices; divide among bottom halves of buns; top with scallion-wasabi mayonnaise, cucumber ribbons, and top bun.
