Hawaiian Pork Sliders with Spam
If there’s any season that bodes well for simplified meals, it’s summer. With an array of produce at its peak, it’s easy to make meals more flavorful with fewer ingredients. With the flavors of ham and roast pork, Spam makes this sandwich extra special.

Instructions
Mince ground pork, fresh ginger and scallions in a food processor; shape into a 4x12-inch rectangle, then cut into 12 patties and season with salt and black pepper.
Heat 1 Tbsp. oil in a cast-iron skillet over medium-high. Fry half the patties until cooked through, 3–4 minutes per side; repeat with remaining 1 Tbsp. oil and patties.
Meanwhile, for the Hawaiian Pico de Gallo, combine the pineapple, bell pepper, and scallion greens.
Transfer sliders to a platter, top with Swiss cheese slices and cover with foil. Sear Spam in same skillet over medium heat, 1 minute per side. Spread barbecue sauce onto cut sides of rolls; layer each with lettuce, pork patty, Spam, and pico.
