Herb-Crusted Pork Loin with Parmesan & Garlic
For a quick and healthy dinner, choose pork loin roast. To give this cut loads of flavor, encrust it with panko and Parmesan.

A creamy side like mashed potatoes pairs perfectly with the hearty, crusted pork. The addition of carrots not only provides you with vision-improving vitamins in your diet, but they also offer a slightly sweet balance to the salty pork and savory potatoes.
Instructions
Preheat oven to 400°. Coat a baking sheet with nonstick spray.
Combine panko, Parmesan, sage, and parsley and transfer to a baking sheet.
Pat pork dry with paper towels. Cut several small slits into top and sides of pork and insert a garlic slice into each; season pork with salt and pepper.
Heat oil in a sauté pan over medium-high; add pork and brown on all sides, 6 minutes. Transfer pork, fat side up, to baking sheet with panko mixture.
Coat pork, including ends, with mayonnaise; roll in crumb mixture, pressing to adhere.
Transfer pork to prepared baking sheet and roast until a thermometer inserted into the center registers 145°, 35–40 minutes.
Tent pork with foil; let rest 10 minutes before slicing.

Cut small slits into the pork with a paring knife, then insert garlic slices into them to ensure flavorful meat.

To help the bread crumb mixture adhere, add a layer of mayonnaise to the outside of the pork.

To ensure the meat is juicy and not overcooked, roast the pork loin until its internal temperature is 145°.
