Honey-Garlic Pork Loin
The classic “chicken with 40 cloves” gets a major overhaul in this incredibly easy and tender pork loin roast meal. The mild flavor of pork makes it a great stand in for the usual chicken. The slightly sweet and tangy garlic sauce pairs perfectly with the pork loin for an easy slow-cooker weeknight dinner.

Instructions
Sear pork in oil in a sauté pan over medium-high heat until browned on all sides, 6–8 minutes; transfer to a 6-qt. slow cooker.
Add garlic to pan and cook over medium-high heat, stirring often, until browned, 5 minutes. Add onions and cook until softened, 3 minutes. Sprinkle flour over garlic and onions and cook 2 minutes.
Deglaze pan with broth, scraping up any brown bits. Stir in lemon juice, and Italian seasoning, season with salt and pepper, then bring to a boil. Pour broth mixture, then honey over pork. Cover slow cooker and cook pork until tender on high setting, 3 hours, or low setting, 6 hours.
Transfer pork to a platter and let rest 5 minutes. Pour cooking liquid into a saucepan and bring to a boil. Reduce heat to medium-low and simmer sauce until thickened, 2–3 minutes. Lightly mash garlic cloves, slice pork, and serve with sauce.

For even cooking, fold narrow end of pork in, then evenly truss the roast with kitchen string.

To ensure even browning and avoid burning, constantly stir the whole garlic cloves in the pan.

For a sweet addition to the sauce, pour honey over the roast into the slow cooker before cooking.
