Instant Pot Chicken Fajitas
These Chicken Fajitas from Lisa Childs's I Love My Instant Pot® Cooking for One Recipe Book are not only loaded with veggies and chicken, the flavor is outstanding. Serve this dish with steamed tortillas, sour cream, and any other favorite fajita toppings.

Press Sauté button on Instant Pot® and adjust to High. Add oil.
Mix together chili powder, salt, oregano, garlic powder, cumin, and pepper flakes in a bowl; transfer about half the mixture to a separate bowl. Add chicken to one bowl with half the seasoning mixture; toss to coat.
Add chicken to hot pot. Sear chicken on each side until browned, about 3 minutes. Do not stir while searing. Press Cancel button to turn off heat.
Add bell peppers, water, soy sauce, lime juice, and reserved seasoning mixture. Deglaze pot, scraping all the browned bits off the bottom of pot.
Close lid; turn knob to Sealing.
Press Manual or Pressure Cook button and adjust time to 2 minutes. When timer beeps, immediately turn knob from Sealing to Venting, then remove lid.
Using tongs, transfer chicken and peppers to a serving plate and serve.
