Using bagged coleslaw mix is an easy shortcut. You can eat the kimchi right away, or let it sit overnight for even more flavor. It too makes a great side dish any time of year.
Instructions
For the kimchi, toss coleslaw mix with salt in a fine-mesh sieve set over a bowl; set aside 1 hour. Rinse coleslaw mix; drain and transfer to a bowl.
Whisk together vinegar, chili paste, fish sauce, garlic, and ginger; toss with coleslaw mix. Cover bowl and chill kimchi until ready to serve.
For the ketchup, whisk together ketchup and chili paste; chill until ready to serve.
For the mayo, whisk together mayonnaise and chili paste; chill until ready to serve.
Serve hot dogs in buns topped with kimchi, ketchup, and mayo.
