Lamb Chops with Strawberry-Balsamic Sauce
Strawberries add a fresh element to this dish and pair nicely with the balsamic-based sauce served with these quick and easy grilled lamb chops.

Instructions
Preheat grill to medium-high. Brush grill grate with oil.
For the sauce, heat vinegar and brown sugar in a saucepan over medium-high until boiling. Reduce heat to medium; simmer sauce until reduced by half, 7 minutes.
Whisk in jelly until it dissolves. Bring to a boil, then cook sauce until it thickens and is syrupy, about 3 minutes more; season with salt and pepper.
For the lamb, grill chops, uncovered, about 4 minutes per side for medium-rare. Transfer chops to a plate, tent with foil, and let rest 3–4 minutes.
Serve chops with sauce, fresh strawberries, and mint.

To ensure the sauce isn’t too thick or too thin, measure the vinegar to see when it’s reduced by half.
