What is Burrata?
Like mozzarella, burrata is a white
orb of fresh cow’s milk cheese. But,
while mozzarella is solid, burrata
encases soft cheese curds and cream
that perfectly melt into the soup.
Instructions
Sauté carrots and onions in oil
in a pot over medium-high heat
until onions are translucent, about
5 minutes. Add garlic, cumin, and
paprika; sauté until fragrant, about
1 minute. Add lentils and toast,
stirring constantly, 1 minute.
Add broth, partially cover pot,
and bring to a simmer. Simmer
soup, stirring occasionally, until
lentils are soft but not mushy,
25–30minutes.
Season soup with salt, pepper, and
vinegar. Divide soup among four
bowls and top each bowl with a
quarter of burrata and 1 Tbsp. basil.
