Grill it quickly over high heat for the best tenderness and flavor.
Instructions
Combine lime juice, garlic, oil, salt, and pepper for marinade in a large resealable bag. Add steak to bag; seal bag and refrigerate for 15 minutes or up to 4 hours to marinate steak.
Prepare grill for indirect grilling, heating one side to high heat and keeping the other side unlit. Remove steak from marinade; discard marinade. Grill steak over high heat, covered, for 3–4minutes per side for medium-rare. Wrap tortillas in a damp towel; wrap towel with aluminum foil. Place tortilla packet over unlit side of grill during last 3 minutes of grilling steak.
Remove steak and tortilla packet from grill. Let steak rest 5 minutes, then cut meat into thin slices against the grain, cutting on the bias.
Divide steak slices evenly between tortillas. Top each taco with about 1/4 cup of Mango Guacamole.
