Instructions

FOR THE MAPLE-LEMON GLAZED MINI HAM:

Preheat oven to 425°. Coat a rack inside a shallow roasting pan with nonstick spray.

Combine syrup, lemon juice, and butter in a saucepan over medium-high heat; bring to a boil. Reduce heat to medium and simmer syrup mixture until thickened, 57 minutes; stir in thyme.

Reserve half the syrup mixture for basting and half for serving.

Arrange ham on prepared rack; cover tightly with foil and cook 20 minutes. Uncover ham and cook, basting every 10 minutes, until brown and shiny and a thermometer inserted in the center registers 140°, 30 minutes more; cover loosely with foil if browning too quickly.

Transfer ham to a cutting board; tent with foil and let rest 510 minutes before carving. Serve ham with remaining half of syrup mixture.

FOR THE MAPLE VINAIGRETTE with baby greens & jicama:

Cook bacon in a skillet until crisp; transfer to a paper-towel-lined plate. Discard drippings; return bacon to skillet. Stir in 1 Tbsp. syrup and bring to a boil over medium heat; simmer until thick. Transfer bacon to a cutting board using a slotted spoon; separate with a fork and let cool.

Whisk together remaining 4 Tbsp. syrup, oil, vinegar, zest, lemon juice, mustard, and chives; add bacon and season vinaigrette with salt and pepper. Toss greens, jicama, grapes, and onions with vinaigrette.
