Mojo Marinated Pork Tacos
Mojo [MOH-hoh] is a zippy Cuban marinade usually made with citrus, garlic, and other spices. The perfect flavors for marinating pork destined for tacos.

For the pork, whisk together orange juice, oil, lime juice, garlic, oregano, salt, black pepper, and pepper flakes. Place tenderloins in a baking dish and pour marinade over top. Cover dish; chill tenderloins until ready to grill, up to 2 hours.
Prepare grill for two-zone grilling, heating one side to medium-high and the other side to medium-low.
Grill tenderloins, covered, over medium-high heat until a thermometer inserted into the centers registers 150°, 12–15 minutes. Remove tenderloins from grill, tent with foil, and let rest while preparing tortillas.
For the tacos, top tortillas with 2 Tbsp. each refried beans and cheese. Place tortillas over medium-low heat and grill just until cheese melts, 1–2 minutes.
Slice tenderloins and arrange on tortillas; serve with Grilled Salsa Roja.

Pour marinade over pork, then turn meat to coat. Refrigerate pork while grill is heating.

Heat tortillas until cheese melts. Tortillas should remain pliable enough to fold without breaking.

Cut pork along the grain into ½-inch-thick slices. Cover half of each tortilla with a few slices of pork.
