Instructions
Melt butter in a pot over mediumhigh
heat. Add onions and sauté
until softened, 3 minutes.
Add mushrooms and garlic,
sauté until softened and browned,
5 minutes, stirring occasionally.
Stir in broth and sage, bring to a
boil, reduce heat to medium-low,
and simmer soup 5 minutes. Add
zucchini and simmer 5 minutes;
season with salt and pepper.
Top servings with Parmesan.
