Make these little steaks sing with a peppery, pungent, stove-top tomato chutney — it’s like ketchup, with gourmet overtones. A lot of people look down their noses at the idea of putting ketchup on steak. But there’s no denying that its sweet tomato flavor is outstanding with the charred taste of the grill. This tomato chutney is similar to ketchup, but the combination of spicy ginger, sweet tomatoes, and jalapeño give it gourmet flavor that’s up to par with char-grilled sirloins. Chutney is supposed to be thick and chunky, so cook it until it’s jamlike.

Instructions
Preheat grill to medium-high. Brush grill grate with oil.
Simmer 1 cup tomatoes, onion, vinegar, sugar, ginger, and garlic in a saucepan over medium-high heat, stirring frequently, 6 minutes. Stir in lime juice, tomato paste, and remaining ½ cup tomatoes. Return mixture to a boil and simmer until tomatoes soften but do not break down, 2–3minutes more. Remove saucepan from heat.
Add jalapeño and season with salt.
Grill steaks, covered, to desired doneness, 3–4minutes per side for medium. Remove steaks from grill; tent with foil and let rest 5 minutes. Serve chutney over steaks.
Lime juice becomes bitter if it’s cooked too long, so add it after the chutney has reduced.
Once the chutney has reached a jam-like consistency, add the remaining tomatoes.
Slice the jalapeño in half and remove the seeds — they add heat. Gloves will protect your hands.
