Pork Souvlaki
A Greek specialty usually made with chunks of lamb, souvlaki [soo-VLAHkee] is a simple-looking food with a surprising depth of Mediterranean flavor.

These skewers can be served with the tangy tzatziki and watermelon salad alongside grilled flatbread — or, tuck them inside pitas to eat as a sandwich.
Instructions
For the pork, combine tenderloin cubes, lemon juice, 1⁄4 cup oil, 1⁄4 cup parsley, 1⁄4 cup mint, garlic, 1 tsp. salt, and 1 tsp. pepper in a large bowl. Cover pork and marinate in refrigerator, at least 3 hours or overnight.
Preheat grill to medium-high. Brush grill grate with oil.
Thread pork, tomatoes, and red onion alternately onto skewers. Grill skewers 8–10 minutes.
Grill flatbread on both sides until toasted.
For the tzatziki, combine yogurt, 1⁄4 cup parsley, 1⁄4 cup mint, zest, 1 Tbsp. oil, and honey in a small bowl; season with salt and pepper.
Serve skewers on flatbread with tzatziki and watermelon salad.

For 24 cubes, halve tenderloin lengthwise, cut each half into thirds, then cut those into four pieces.

To keep the pork submerged in the marinade, seal it by pressing plastic wrap directly onto the mixture.

So the skewers cook evenly, cut each piece of pork and red onion roughly the same size as the tomatoes.
