Toss pork with 2 Tbsp. oil, chipotle, garlic, oregano, cumin, and 1 tsp. salt.
Heat remaining 1 Tbsp. oil in a skillet over medium-high. Add onions and cook until softened, 4–5minutes. Add pineapple and cook until heated through, 1–2minutes. Stir in pineapple juice and cook 1 minute; season with salt and pepper and transfer to a bowl.
Cook pork mixture in same skillet until browned, 4–5minutes.
Divide pork among tortillas; top with pineapple mixture and cilantro.
