Ingredients

Five-Minute Morning Prep

Make flatbread dough, and cook. Cover flatbreads, and store at room temperature.

Instructions

Preheat oven to broil.

Whisk together flour and ¼ teaspoon kosher salt in a large bowl. Stir in yogurt and 1 tablespoon olive oil until a shaggy dough forms. On a lightly floured surface, knead dough until smooth, about 3 minutes; divide dough in half, and roll out each half to ⅛-inch thickness.

Heat a large saucepan over medium-high heat. Working in batches, add dough; cook for 3 minutes, turning halfway through.

Place dough on a 17½x12½-inch rimmed baking sheet. Spread preserves onto dough. Sprinkle with prosciutto and goat cheese.

Broil for 3 to 5 minutes. Garnish with ground black pepper, if desired.
