Reuben Quesadillas with Thousand Island Sauce

Who doesn’t love quesadillas? Loaded with corned beef, sauerkraut, and Swiss cheese, then stuffed into a flour tortilla, and served with homemade Thousand Island, it’s unlike any quesadilla you’ve ever had before. And with an electric griddle you’re able to cook all of the quesadillas at the same time in a matter of minutes for a quick and easy appetizer or dinner idea.

For the best quesadillas, have the deli slice the corned beef very thinly.

Instructions

Heat an electric griddle coated with nonstick spray to 400°.

For the sauce, stir together mayonnaise, ketchup, scallions, pickle relish, and vinegar; season with salt, pepper, and Tabasco.

For the quesadillas, arrange ½ cup Swiss, ¼ cup sauerkraut, ¼ tsp. caraway seeds, and 2 oz. corned beef on half of each tortilla. Fold empty sides of tortillas over filling, transfer to griddle, and cover quesadillas with a baking sheet. Cook quesadillas until golden on each side and Swiss is melted, 56 minutes per side. Let rest 2 minutes, then slice quesadillas into wedges and serve with sauce.

To prevent quesadillas from getting soggy, dry sauerkraut in a salad spinner lined with paper towels.
