Roast Pork Loin with Pineapple-Raisin Sauce
Knock the socks right off family and friends with a pork roast that’s simple to prepare, and is as juicy and delicious as can be. Then blow their minds by serving the roast with a sauce that explodes with flavor.
The holidays are a time to prepare something special that the family will love, but with time at a premium you also want it to be fairly simple, and this roast is just the ticket.
It’s infused with tons of flavor because you cut slits into the roast to stuff with garlic cloves, then you score the top and rub it with an herbed oil. Then to make a good thing even better, serve the roast with the Pineapple-Raisin Sauce. It’s sweet, tart, and has a hint of spicy ginger — the perfect complement to the roast.

Drippings from the pork roast will be too scorched to use in a sauce, so line the roasting pan with foil to make cleaning up easy
Instructions
Preheat oven to 500° with oven rack in center position. Line a shallow roasting pan with foil.
For the pork, combine oil, thyme, rosemary, and sage. Pierce six slits, 2-inches apart, on top of pork. Insert a garlic half into each slit.
Score top of pork in a crisscross pattern. Rub oil mixture onto pork and season with salt and pepper.
Roast pork 20 minutes, then flip and roast until an instant-read thermometer inserted in thickest part registers 145°, 20 minutes more. Remove pork from pan, tent with foil, and rest 10–15 minutes.
For the sauce, heat pineapple and brown sugar in a saucepan over medium until sugar dissolves, 3 minutes. Add raisins and ginger.
Whisk together cornstarch and broth, then slowly add to pineapple mixture, whisking constantly. Bring sauce to a boil and cook until thickened. Stir in vinegar, season with salt and pepper, and serve sauce with sliced pork.
