Heat vegetable oil in a nonstick skillet over medium to 350°. Fry tortillas, one at a time, until crisp, flipping halfway through, about 1 minute; drain on a paper-towel-lined baking sheet and season with salt.
Toss together coleslaw, cilantro, vinegar, and 1 Tbsp. olive oil; season with salt.
Cook shrimp in remaining 2 Tbsp. olive oil in a skillet over medium-high heat, 2–3minutes. Stir in lime juice until absorbed, then season with Tabasco.
Top tostadas with coleslaw, onion, avocado, and shrimp.
