Instructions
Melt butter in a pot over medium heat. Add onions and garlic, sweat partially covered, until onions soften, 10 minutes.
Stir in flour and cumin; cook 2 minutes. Stir in potatoes and broth; bring to a boil over medium-high heat. Reduce heat to medium-low and simmer soup 5 minutes.
Stir in pepper Jack and milk until cheese is melted. Stir in cilantro; season soup with salt and pepper.
