Preheat grill to medium-high. Brush grill grate with oil.
Heat 1 Tbsp. oil in a sauté pan over medium-high; add mushrooms and sauté until they begin to brown, 3–4 minutes. Stir in garlic and cook 1 minute; season with salt and pepper. Remove pan from heat; cool mushrooms.
Combine ground sirloin with 1 Tbsp. oil, soy sauce, ½ tsp. salt, ½ tsp. pepper, and mushroom mixture in a bowl. Divide and shape sirloin mixture into four patties.
Grill burgers, covered, until a thermometer inserted into centers registers 160°, 3–4 minutes per side; transfer to a plate, tent with foil, and let rest 5 minutes.
Reduce grill heat to medium-low.
Brush toast with remaining 1 Tbsp. oil. Grill toast until lightly browned, 1–2 minutes per side.
Top toast with burgers, Creamed Spinach Sauce, and Parmesan.
