Tampa-Style Cubano Panini with lime mojo mayonnaise
This slight twist on a classic Cubano sandwich incorporates leftover roast
pork in concert with ham and salami. Salami is what differentiates the
Tampa-style Cubano from the
original South Florida Cubano.

Place panini in a large skillet
over medium-low heat; top
with a piece of parchment and
a cast-iron skillet or a regular
skillet weighted with a 28 oz.

first side is browned, carefully
flip panini and re-weight.
Cook panini until cheese
melts and fillings heated
through, 7–10 minutes.
Whisk together mayonnaise, lime
juice, and garlic; season with pepper.
Spread mayonnaise mixture on cut
sides of baguette; top bottom half
with pork, salami, ham, Swiss, and
pickles. Spread yellow mustard on
top half of baguette; arrange on
bottom half.
Place sandwich in panini press;
cook until cheese is melting,
7–10minutes. Cut panini into
quarters.
