You'll use three lasagna sheets in each of the lasagna layers, but it's always good to cook a couple extra to fill in gaps or in case one tears.
Instructions
Mince onions, carrots, celery, and garlic in a food processor.
Heat oil in a pot over medium; add minced aromatics and cook until liquid evaporates and vegetables soften, 5–8 minutes. Stir in salt.
Stir in chuck, sausage, and pepperoni, breaking up chunks with a wooden spoon. Add Italian seasoning, fennel seed, black pepper, and pepper flakes; cook until meats are no longer pink, about 5 minutes. Stir in tomato paste and cook 2–3 minutes.
Stir in cream; simmer until cream nearly evaporated, stirring often, about 10 minutes. Add wine; simmer until nearly evaporated, 10–15 minutes.
Add tomatoes and bay leaves and reduce heat to low; simmer until thick, about 45 minutes, stirring occasionally. Discard bay leaves; season Bolognese with salt and black pepper.
Whisk together cottage cheese, ½ cup mozzarella, ½ cup Parmesan, eggs, and garlic powder; season filling with salt and black pepper.
Preheat oven to 400°. Coat a 9×13-inch baking dish with nonstick spray. Line two baking sheets with foil; coat with nonstick spray.
Cook lasagna sheets in a pot of boiling salted water until pliable, 2 minutes; transfer to prepared baking sheets.
Spread 1 cup Bolognese on bottom of prepared dish; top with three lasagna sheets, ¾ cup filling, and 1 cup Bolognese. Sprinkle ¾ cup mozzarella and ¼ cup Parmesan over top. Repeat layering with lasagna sheets, filling, Bolognese, mozzarella, and Parmesan; cover lasagna.
Bake lasagna, covered, 25 minutes; uncover, sprinkle with remaining mozzarella and Parmesan, then continue baking until golden and bubbly, 20–25 minutes more. Let lasagna rest 15 minutes before slicing and serving
