To make your own dressing, whisk together 1/2 cup mayonnaise, 1/4 cup ketchup, 2 Tbsp. sweet pickle relish, and 1 Tbsp. fresh lemon juice.
Instructions
Sauté tofu, in batches, in a nonstick skillet over high heat until golden on both sides.
Spread butter on 1 side of each bread slice.
Arrange bread slices, buttered sides down, on a cutting board; spread each with 1 Tbsp. dressing, then layer 1 slice cheese, 2 pieces tofu, 1/4 cup sauerkraut, and 1 more slice of cheese on half the slices. Place remaining bread slices on top of sandwiches, buttered sides up.
Cook sandwiches in same skillet, in 2 batches, over medium heat until bread is browned on both sides and cheese is melted; let rest 2 minutes, then cut in half.
