While chipotles add smoky flavor to dishes, these dried jalapeños also pack a little heat. You may need to adjust the amount to your liking.
Instructions
Melt butter in a large pot over medium heat. Add onions and cook 3 minutes. Stir in garlic, chipotles, and adobo sauce; cook 1–2minutes. Stir in flour and cook 1 minute.
Add broth and tomatoes; bring to a boil. Reduce heat to medium-low and simmer soup 30 minutes. Remove soup from heat and purée with a blender until smooth.
Stir in chopped cilantro and season soup with salt and pepper. Garnish each serving with tortilla chips, sour cream or guacamole, and cilantro.
