It melts better and prevents the sauce
from becoming gritty.
For the smoothest sauce, grate the cheese as fine as
possible in a food processor using the regular blade.
Instructions
Heat cream, garlic, and nutmeg
in a saucepan over medium-low
until steaming. Whisk in butter
until completely melted.
Add Parmigiano-Reggiano and
increase heat to medium. Cook
sauce until thickened, whisking
constantly, 20 minutes. Discard
garlic, then season sauce
with pepper.
