Heat safflower oil in a sauté pan over
high. Add tomatoes and sear until
they blister, 2–3minutes. Add garlic
and sauté 30 seconds; transfer to
a bowl to cool, then lightly crush.
Coat onion with nonstick spray.
Preheat a grill pan or grill
over medium-high. Brush grill grate
with oil. Grill until onion softens,
5–7minutes; chop, and add to
tomato mixture.
Whisk together lime juice, olive oil,
chipotle, and adobo sauce; add
to tomato mixture with oregano,
tossing to combine. Season salsa
with salt.
