Instructions
Combine figs, sugar, zest, and salt in a saucepan; let stand 1 hour, stirring occasionally.
Add 1/2 cup wine, honey, and cinnamon stick to pan; bring to a boil over medium-high heat. Reduce heat to medium; simmer jam until thickened, occasionally stirring and crushing figs with a potato masher, about 30 minutes.
Off heat, stir in remaining 2 Tbsp. wine and vanilla; cool jam completely. Store jam in an airtight container in the fridge for up to 2 weeks.
