Honey Mustard Sauce

This sweet-savory sauce is great for complimenting salmon and steak.

Ingredients

Two types of mustard — spicy brown and Dijon — give the sauce more complex flavor, but you can use all of one type if you want.

Instructions

Sauté shallot in butter in a saucepan, about 3 minutes.

Deglaze saucepan with apple cider; simmer sauce until reduced, about 3 minutes.

Stir in broth, cream, Dijon, and honey. Simmer sauce until it’s slightly thickened, about 5 minutes.

Whisk in beurre manié and thyme; season with salt and cayenne. Keep sauce warm over low heat (don’t boil) until ready to serve.

Mix <em>beurre mani&eacute;</em> by combining equal parts softened butter and flour in a small bowl. Use 2 tsp. <em>buerre mani&eacute;</em> for the mustard sauce.
