Instructions
Purée butter, Cheddar, and mayonnaise in a mini food processor.
Add pimentos and scallions to processer and pulse until finely chopped; season with salt and pepper.
Mound butter onto a piece of plastic wrap. Roll plastic wrap around butter to form a tight cylinder, then twist ends to seal; chill until firm.
Serve grilled corn with Pimento Cheese Butter.
