Sauté onions in oil in a saucepan
over medium heat until softened;
add jalapeño, garlic, and ginger
and cook until fragrant, 1 minute.
Stir in pineapple juice, fresh
pineapple, brown sugar, rum,
lime juice, mustard, salt, and
pepper. Simmer sauce until slightly
thickened, about 20 minutes.
Transfer sauce to a blender and
purée; add cilantro and pulse just
to combine.
