Madeira, increase heat to medium-high, and cook until absorbed.
Stir in diced pineapple, pineapple juice, and honey; bring to a boil. Reduce heat to medium-low; simmer until liquid is reduced by about half, 18 minutes; season with salt and pepper flakes.
Whisk together vinegar and cornstarch, then whisk into compote and bring to a boil over medium-high heat. Reduce heat to medium-low and cook compote until it thickens, about 2 minutes; stir in parsley and Dijon.
