Instructions
Pulse tomatoes with juice, onion,
oil, garlic, serrano, and oregano in
a blender or food processer until
mixture is fairly smooth; transfer
to a saucepan.
Bring salsa to a simmer over
medium heat. Reduce heat to
low and let salsa simmer, partially
covered, until thickened, about
30 minutes; season with salt and
pepper. Let salsa cool, then stir
in cilantro; refrigerate until ready
to use.
