Melt butter in a saucepan over medium-high heat. Add onion; cook until softened, 2–3minutes. Whisk in flour; cook 1 minute. Whisk in milk; bring to a boil over medium heat and cook until thickened and smooth, 2–3minutes. Stir in Parmesan and Swiss cheeses until melted. Stir in spinach, lemon juice, and Dijon mustard; season with salt, freshly grated nutmeg, and Tabasco sauce to taste.
