Make the sauce up to two days ahead and chill it, but bring it to room temperature before serving.
Instructions
Sweat onion and garlic in oil in a saucepan over medium-low heat until softened, 5 minutes.
Stir in tomato paste and anchovy paste; cook 2 minutes. Stir in water, Worcestershire, vinegar, brown sugar, lemon juice, soy sauce, mustard, and chipotle and bring to a boil. Reduce heat to medium-low and simmer until reduced to 1 cup, 20 minutes. Season sauce with salt and pepper; let cool, then strain.
